Ingredients: 1/4 to 1/2 c. extra virgin olive oil 2 c. plain yogurt or kefir 1 small cucumber, peeled, seeded, and grated 3-5 garlic cloves, mashed with 1/2 t. salt 2 T. chopped fresh mint To prepare: Combine all ingredients and allow to sit for at least a couple hours in the refrigerator.
Note: Instead of processing garlic through a press, try mashing with a little salt in a mortar and pestle. Salt brings out the sweetness of the bulb. |
