Tsatsiki

A wonderful combination of tart yogurt, olive oil, sweet cucumber and mashed garlic. This is a great dip/ spread to have in the fridge. My Tsatsiki recipes usually entails draining my yogurt and making sure that the peeled seeded and grated cucumber is very well dried. By using the denser Kefir cheese, both of these steps are eliminated. Simply combine and serve with my spicy pita chips or vegetable crudités a real party favorite.

Ingredients:
1/4 to 1/2 c. extra virgin olive oil
2 c. plain yogurt or kefir
1 small cucumber, peeled, seeded, and grated
3-5 garlic cloves, mashed with 1/2 t. salt
2 T. chopped fresh mint

To prepare:
Combine all ingredients and allow to sit for at least a couple hours in the refrigerator.

Note: Instead of processing garlic through a press, try mashing with a little salt in a mortar and pestle. Salt brings out the sweetness of the bulb.
