Toni's Favorite Tomato Salsa

This classic table sauce is just one in a world of relish possibilities and is a perfect complement to any Mexican-influenced menu. Scoop by the spoonful onto whatever you're serving and get a burst of spicy tomato flavor. Great also served as a simple snack with warmed tortillas or corn chips. Try adding your own choice of vegetables or fruit, then make it spicy or mild -- you're only limited by your own imagination.

serves 4

Ingredients:
4-6 red ripe tomatoes, seeded and chopped into fairly small dice
1-1/2 white onions, chopped
2 scallions, chopped
1-3 poblano peppers, or any other hot pepper such as jalapeno, chopped
1/3 cup chopped cilantro
1 lime, squeezed with pulp
salt
1/4 c. of your favorite jarred picante sauce to taste (optional)

To prepare:
Combine all ingredients in a bowl and season to taste with salt. Salsa should be allowed to rest for at least 30 minutes and can be made up to two days ahead and stored in the refrigerator. Serve alongside fajitas, tacos, tostadas, or with your favorite chip.

You can also use leftover salsa mixed with tofu or eggs in an omelet.
