| Toni's Favorite Tomato Salsa | ||
serves 4 Ingredients: 4-6 red ripe tomatoes, seeded and chopped into fairly small dice 1-1/2 white onions, chopped 2 scallions, chopped 1-3 poblano peppers, or any other hot pepper such as jalapeno, chopped 1/3 cup chopped cilantro 1 lime, squeezed with pulp salt 1/4 c. of your favorite jarred picante sauce to taste (optional) To prepare: Combine all ingredients in a bowl and season to taste with salt. Salsa should be allowed to rest for at least 30 minutes and can be made up to two days ahead and stored in the refrigerator. Serve alongside fajitas, tacos, tostadas, or with your favorite chip. You can also use leftover salsa mixed with tofu or eggs in an omelet. |
