Here's a quick protien packed salad recipe from our new season.

Spicy chic pea salad
Spicy Chick Pea Salad with Basil and Pine nuts

1 (15 1/2 Can) Chick Peas drained and rinsed
2Tbl. Red onion finely chopped
1/2 Cup Red or Yellow bell pepper chopped ( or mix red and yellow for added color)
1/4 Cup Toasted Pine nuts
1/4 Cup Fresh Basil cut into ribbons

2 Tbl olive oil
1 Tbl Fresh lemon juice
1 Tsp Fresh Chili Paste
Salt and pepper

Rinse beans and place into a bowl. Add the onion, peppers, pine nuts, and basil. In a small bowl whisk together the oil, pepper paste, and lemon juice until emulsified. Pour over the chick peas and toss to combine. Season with salt and pepper to taste.

Serve with a hearty slice of bread to mop up the juices, or alternatively, lightly mash the chick peas and serve on grilled or toasted bread as a bruschetta.
